I learn best in a classroom format - are there any formal training classes
teaching OpenBSD? Where would I find out about them and which are the best
ones?

I am not aware of any such course being taught. That said, most general
UNIX courses will be appropriate - after all, aside from kernel-level
stuff like pf, at least 90% is the same.

I have no idea how good the training is.
You also did not state the goal for the training.

Is it to provide certification to humor a PHB?
Is it to provide a paid vacation away from the worksite?
Is it herd mentality in a "validated environment" shop?

I did google but found nothing nearby or something that looked
professional - maybe I missed it.

My goal is to enhance my developer background and run my own dedicated or
colocated servers at a data center. Security is of utmost importance to me.
I'd rather NOT spend $20k with RedHat to get to that certification point.
