I would start by going here and reading some of Ralph
Kimball's articles

If you haven't installed Analysis Services by Microsoft,
they have a good tutorial that walks you through setting
up an OLAP cube.

If you decide to go Analysis Services, Reed Jacobsons
Microsoft SQL Server 2000 Analysis Services Step by Step
is a good book.
