Possible to Extract data from .dat files?

I have a database dump from an old system (using sybase 7 or 8) that
was copied out to .dat files using BCP. Is there a way to convert these
..dat files to a more common format so that I can re-use the data (Plain
text, CSV, XML, anything?) I do have all the DB schema for all the
tables, if that helps.
