Default Printing garbage using CUPS

I am running RH 7.3 kernel 2.4.18-3 on a P200.
I am trying to get CUPS working w/ my Epson 640C.
I configured the printer through the CUPS gui choosing 'Epson Stylus
Color 640, Foomatic + stcolor (en)

When I attemped to print (echo hello | lpr.cups) the printer would print
garbage.

What do I need to do to configure the printer so it prints correctly?
